Our beef usually go to the butcher the first half of the year, but we keep plenty of inventory on hand as well. Lambs go to the butcher in early summer. Chickens are processed mid-summer and in October.
A $75 deposit is requested on orders going to the butcher; it counts toward your total due though. Payment for bulk orders is due by pick-up - beef takes two weeks at the butcher, other animals are usually ready the same Friday.
We proudly use Coffaro's Custom Butcher in Sugar Grove, PA for our USDA inspected butchering but may have bulk orders filled at other butchers due to restricted availability.
We process poultry ourselves here on the Homestead. Chickens can be picked up fresh within 3 days of butcher, otherwise they're sold frozen. Chicken is a seasonal product as our weather does not usually cooperate from October to April. We keep what doesn't sell right away in the deep-freeze so the year's crop can be sold through the winter. Here's hoping all of our homegrown, pasture-raised chickens get sold though!
